Braga Rice OriginsBraga is also home to a wonderful Portuguese Cuisine that is so noteworthy it is appreciated worldwide. This dish has undergone minor alterations to become a favorite in Brazilian cooking. Braga is one of the major cities in Portugal and one of the oldest Christian cities in the world. It is also considered Portugal's most conservative city.
Among specialties from Braga are several mouth-watering recipes for cod fish dishes, soups, hams, ducks. Braga is also famous for its dessert recipes, traditionally prepared by the nuns. As for wines, the region is also famous for its Port and ‘Green’ wines.

Braga Rice Recipe
Ingredients
- 2 ½ cups of long-grain rice
- 1 lb chicken, cut up
- 1/2 lb bulk sweet Italian pork sausage, sliced
- 2 cups bacon, chopped
- 2 cups Supressata sliced
- 2 cups green beans, finely chopped
- ½ small cabbage, or 5 leaves, finely chopped
- 3 tomatoes, medium size peeled and seeded
- 1 green bell pepper medium size, chopped
- 1 garlic clove, minced
- 1 large onion, chopped
- 1 bay leaf
- 16 cups of boiling water
- 1 cup of vegetable stock, if needed
- 2 parsley and scallions sprigs, finely chopped
- 2 tablespoons of extra virgin olive oil Salt and pepper to taste
Preparation
- In a clay pot add the bacon, olive oil and garlic brown in medium heat.
- Add the chicken and stir from time to time.
- While the chicken is browning, put the onion, tomatoes, and green bell pepper in a food processor or blender.
- Add the mixture from the blender to the clay pot, mix for 3 minutes.
- Add the Supressata, sausage, and rice, cook for another 3 minutes, mixing it always.
- Add the green beans and cabbage, boiling water until it’s 4 in. over the rice line.
- Add the oregano, salt and pepper.
- Put the lid on the pot and cook in medium heat for about 30 minutes until the rice is tender, add more boiling water if necessary.
- The rice must be very moist or juicy.
- Add the parsley and scallions close the pot and wait 10 minutes before serving.
- Make sure the rice is moist, if it’s dry, add 1 cup vegetable stock and let it sit for about 5 minutes before serving.
This rice dish casserole is robust enough to be served by itself. Dessert could be light such as a fresh fruit cup. Braga Rice can be saved and reheated for a next day meal.
If a clay pot is not available any other regular pot will do, although, the dish tastes better if a clay pot is used.
Supressata is a type of salami available at most Delis or supermarket store.
